Crepe ricotta e spinaci

Ingredients

  • For the crepes:

    • 250 ml of milk
    • 100 g of flour
    • 2 eggs
    • A pinch of salt
    • Butter for cooking the crepes
  • For the filling:

    • 500 g of fresh spinach (or 250 g if frozen)
    • 250 g of ricotta
    • Salt and pepper to taste
    • Nutmeg (optional)
    • Grated Parmesan cheese for sprinkling

Preparation

  1. Preparing the crepes:

    • Beat the eggs in a bowl, add salt and mix well.
    • Sift the flour into a separate bowl and start adding the milk gradually to avoid lumps.
    • Combine the egg mixture with the flour and milk mixture, stirring to get a smooth and homogeneous batter.
    • Let the batter rest in the refrigerator for about 30 minutes.
    • Heat a medium-sized non-stick pan and add a little piece of butter to prevent the crepe from sticking.
    • Pour a ladleful of batter and tilt the pan to spread the mixture evenly.
    • Cook for about 1-2 minutes on each side or until the crepe turns golden brown. Repeat until all the batter is used up.
  2. Preparing the ricotta and spinach filling:

    • Clean and wash the spinach well, then boil it in slightly salted water for a few minutes. If using frozen spinach, follow the instructions on the package for heating.
    • Squeeze the spinach well to remove all the water and chop it coarsely.
    • In a bowl, mix the spinach with ricotta. Season with salt and pepper and add a sprinkle of nutmeg if you like.
  3. Filling the crepes:

    • Spread the ricotta and spinach filling over one half of the crepes, sprinkle with grated Parmesan cheese, then fold the crepes over or roll them up.
    • Arrange the crepes in a lightly buttered baking dish.
    • You can add some bechamel sauce and more grated Parmesan cheese on top if you wish to gratinate them in the oven for a few minutes.
