Ricotta and Pear Ciambella

Preparation

  1. Preheat the oven to 180 °C and prepare a bundt pan by greasing it with a little butter and flouring it.
  2. In a bowl, mix the ricotta with the eggs and sugar until you have a smooth and creamy mixture.
  3. Add the grated lemon zest and melted butter, stirring well.
  4. In another bowl, sift the flour with the baking powder and a pinch of salt.

  6. Peel the pears, remove the core and cut them into not too large cubes.
  7. Gently fold the pear pieces into the batter.
  8. Pour the mixture into the prepared pan and level the surface with a spatula.
  9. Bake the ciambella for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Take the ciambella out of the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  11. Before serving, you can sprinkle the ciambella with powdered sugar.
