Ricotta and Orange Plumcake

I can provide you with a recipe for a delicious ricotta and orange plumcake. Here are the ingredients and the procedure for preparing it.

Ingredients

  • 250 g of all-purpose flour
  • 200 g of ricotta cheese
  • 180 g of granulated sugar
  • 3 eggs
  • 100 ml of fresh orange juice
  • The grated zest of one orange (organic if possible)
  • 80 ml of sunflower seed oil
  • 1 sachet of baking powder
  • A pinch of salt
  • Butter and flour for the mold

Preparation

  1. Preheat the oven to 180°C and prepare a plumcake mold, buttering and flouring it to prevent the mixture from sticking.

  2. In a bowl, work the eggs with the granulated sugar until you get a light and fluffy mixture.

  3. Add the ricotta to the egg and sugar mixture and mix well until smooth.

  4. Incoporate the grated orange zest and mix.

  5. Add the orange juice and sunflower seed oil, continuing to mix to blend all the ingredients.

  6. Sift the flour, baking powder, and pinch of salt and gently incorporate them into the wet mixture, mixing from the bottom up to avoid lumps and to not deflate the mixture.

  7. Pour the batter into the prepared plumcake mold and gently level the surface.

  8. Bake and cook for about 40 minutes or until a toothpick inserted into the center of the plumcake comes out clean.

  9. Once baked, remove the plumcake from the oven and let it cool for a few minutes, then unmold it and let it cool completely on a wire rack.

Curiosity

The plumcake, or plum cake, is a dessert of English origin, but it has found a new home in Italy, where it has been reinvented in many variations. The combination of ricotta, which makes the batter moist and light, and the citrus aroma of the zest and orange juice, make it a perfect sweet for breakfast or an afternoon break. Ricotta is a very versatile and appreciated ingredient in Italian pastry, known for giving freshness and softness to desserts.
