Ricotta and Chocolate Tiramisu

Ricotta and Chocolate Tiramisu is a variation of the classic Tiramisu with mascarpone. Using ricotta makes it a bit lighter with a slightly different texture, but it is equally delicious. Let’s see the recipe:

Ingredients

  • 250 g of ricotta cheese
  • 100 g of sugar
  • 200 g of ladyfingers
  • 2 eggs (with whites and yolks separated)
  • 200 ml of cold espresso coffee
  • Unsweetened cocoa powder to taste
  • 100 g of dark chocolate
  • A pinch of salt

Preparation

  1. Start by separating the yolks from the whites of the eggs. In a bowl, whisk the yolks with sugar until the mixture is light and fluffy.
  2. Add the ricotta to the yolk and sugar mixture, stirring gently until it becomes a smooth and even cream.
  3. Melt the dark chocolate in a double boiler or in the microwave, being careful not to burn it. Let it cool slightly.
  4. In another bowl, beat the egg whites with a pinch of salt until they form stiff peaks.
  5. Gently fold the whipped egg whites into the ricotta cream, using bottom-to-top motions to avoid deflating the mixture.
  6. Add the melted chocolate to the ricotta cream and mix gently to maintain the foamy consistency.
  7. Quickly dip the ladyfingers in cold espresso coffee, without softening them too much.
  8. Arrange a layer of soaked ladyfingers at the bottom of a baking dish.
  9. Spread half of the ricotta and chocolate cream over the ladyfingers.
  10. Add a second layer of ladyfingers and cover with the remaining ricotta and chocolate mixture.
  11. Let the tiramisu rest in the refrigerator for at least 3-4 hours, better if overnight.
  12. Before serving, dust the surface with unsweetened cocoa.
