Ricotta and Basil Fritters
17/11/2023Ricotta and basil fritters are a simple and tasty dish that can be served as an appetizer or snack. Here is the recipe with a small Italian twist, in case it is not already a classic of our tradition.
Ingredients
- 250 g of well-drained fresh ricotta
- 50 g of grated Parmesan cheese
- 2 large eggs
- 100 g of all-purpose flour plus more for dusting
- A pinch of nutmeg
- Salt and pepper to taste
- A bunch of fresh basil
- Seed oil for frying (sunflower or peanut oil, for example)
Preparation
- In a large bowl, blend the ricotta with the grated Parmesan cheese.
- Add the eggs and mix until smooth.
- Fold in the sifted flour, a pinch of salt, pepper, and nutmeg, and continue mixing to prevent any lumps from forming.
- Wash and gently dry the basil leaves, then chop them finely and incorporate into the mixture.
- Heat a generous amount of oil in a wide pan over medium heat.
- When the oil is the right temperature (to test, dip the handle of a wooden spoon in it - if small bubbles form around it, it’s ready), scoop portions of the batter with a spoon, dust them in flour and gently lower them into the hot oil.
- Fry the fritters until they are golden on both sides, then lift them out with a slotted spoon and let them drain on paper towels.
- Serve hot or at room temperature.
