Curry Veggie Buns

Ingredients

  • Spices: curry powder, paprika, ground coriander, salt and pepper
  • Soy sauce
  • Shallot (for a more Italian touch instead of the classic leek)
  • Vegetable broth

Preparation

  1. Begin by dissolving the yeast in the lukewarm milk with the sugar. Let it rest until it starts to foam.
  2. In a large bowl, sift the flour with the salt, turmeric, and add the activated yeast.
  3. Work the dough gradually adding the olive oil until you get a smooth and elastic dough. Cover the bowl with a damp cloth and let it rise in a warm place for at least 1 hour or until the dough doubles in volume.
  4. In the meantime, prepare the filling. Cut all the vegetables into small cubes and sauté them in a pan with extra virgin olive oil, chopped garlic, and grated fresh ginger. Add the spices and cook until the vegetables are soft.
  5. Add some vegetable broth and chopped shallot, and continue cooking until the liquid has dried up. Add a touch of soy sauce and let the mixture cool.
  6. Once the dough has risen, divide it into balls of the desired size, then flatten them into flat discs. Place a spoonful of filling in the center of each disk and close the bun by pinching the edges together at the top.
  7. Let the buns rest for another 20-30 minutes, then steam them for about 15 minutes.
