Rice Spaghetti with Vegetables and Caramelized Chicken

Rice spaghetti with vegetables and caramelized chicken is a delicious dish that mixes sweet, savory, and a bit of crunch from the vegetables. Here is a recipe you can try, with an Italian twist.

Ingredients

  • 200 g of rice spaghetti
  • 300 g of chicken breast
  • 2 tablespoons of honey
  • 1 tablespoon of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 red bell pepper
  • 1 carrot
  • 150 g of bamboo shoots (if not available, you can substitute with soybean sprouts)
  • 100 g of green beans
  • 2 scallions
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chives (for garnish)

Preparation

  1. Cut the chicken breast into strips and marinate it with the honey, soy sauce, and rice vinegar for at least 30 minutes.
  2. In the meantime, bring a pot of salted water to a boil and cook the rice spaghetti following the instructions on the package. Then drain them and run them under cold water to stop the cooking process.
  3. Cut the vegetables into strips (carrot, bell pepper), pieces (green beans), and slice the scallions.
  4. In a large pan, heat a drizzle of oil and add the marinated chicken without its marinade. Brown the chicken well on all sides until it is nicely caramelized. Remove the chicken and set it aside.
  5. In the same pan, add another drizzle of oil and stir-fry the vegetables, starting with those that take longer, hence the green beans and carrots, after a few minutes add the bell peppers and finally the bamboo shoots and scallions.
  6. When the vegetables are cooked but still crunchy, add the rice spaghetti and the chicken to the pan. Mix well and stir-fry for a few minutes to blend the flavors.
  7. Adjust with salt and pepper, then serve the spaghetti garnished with chopped chives for a fresh touch.

In Italy, it is common to add a personal touch to recipes. In this case, we used extra virgin olive oil for stir-frying the vegetables, which gives a unique flavor to the dish and enriches it with the beneficial qualities of olive oil.
