Preparation

  1. In a container suitable for microwave cooking (like a glass jar with a lid or a jar cooking container), pour the rice, water, and teaspoon of salt.
  2. Close the container with its lid or with a plate if using a glass jar.
  3. Cook in the microwave at maximum power for about 18-20 minutes. Cooking time may vary depending on the power of your microwave, so I advise checking the rice at about 18 minutes.
  4. Let the rice rest for a couple of minutes, then fluff it with a fork to separate the grains.
  5. Let the rice cool down completely. You can speed up the process by spreading the rice on a tray.

In the meantime, prepare the ingredients you want to add:

  1. Wash and cut the vegetables into cubes or as you prefer.
  2. If you wish to add proteins like tuna, eggs, or mozzarella, prepare them separately.
  3. For the dressing, combine in a small bowl extra virgin olive oil, vinegar or lemon, salt, pepper, and chopped herbs.
  4. Once the rice has cooled, mix it with the vegetables, proteins, and dressing in a large bowl.
  5. Mix everything well and adjust seasoning with salt and pepper if necessary.
