Rice Timbale

It’s a versatile and delicious dish that you can personalize with different ingredients according to your taste and availability. Below I present you with a basic version of the rice timbale, to which you can eventually add other ingredients such as vegetables or proteins.
Ingredients
- 300 g of rice (preferably Carnaroli or Arborio, suitable for creaming)
- 1 liter of vegetable or meat broth
- 100 g of grated Parmesan cheese
- 3 eggs
- 50 g of butter
- Salt and pepper (to taste)
- Butter and breadcrumbs (to grease and sprinkle the mold)
- (Optional) Vegetables of your choice (e.g., spinach, mushrooms, zucchini), meats or fish in small pieces
Preparation
- Prepare the rice: bring the broth to a boil in a saucepan and cook the rice al dente. Remember that it should be al dente because it will continue to cook in the oven.
- While the rice is cooking, if you want to add vegetables to your timbale, sauté some vegetables of your choice in a pan with a little oil and salt.
- Prepare the mold for the timbale by greasing it with butter and dusting it with breadcrumbs, this way it will not stick during cooking.
- When the rice is ready, transfer it to a large bowl and let it cool down. Then add the butter, the Parmesan, and the previously beaten eggs. Adjust the salt and pepper according to your taste.
- If you have chosen to add vegetables or other ingredients, now gently fold them into the rice mixture.
- Pour the mixture into the prepared mold and level it.
- Bake in a preheated oven at 180 °C for about 20-25 minutes, or until the timbale is well browned on the surface.
- Let the timbale rest for a few minutes before unmolding to avoid breaking.
