Rice Timbale

Ingredients

  • 300 g of rice (preferably Carnaroli or Arborio, suitable for creaming)
  • 1 liter of vegetable or meat broth
  • 100 g of grated Parmesan cheese
  • 3 eggs
  • 50 g of butter
  • Salt and pepper (to taste)
  • Butter and breadcrumbs (to grease and sprinkle the mold)
  • (Optional) Vegetables of your choice (e.g., spinach, mushrooms, zucchini), meats or fish in small pieces

Preparation

  1. Prepare the rice: bring the broth to a boil in a saucepan and cook the rice al dente. Remember that it should be al dente because it will continue to cook in the oven.
  2. While the rice is cooking, if you want to add vegetables to your timbale, sauté some vegetables of your choice in a pan with a little oil and salt.
  3. Prepare the mold for the timbale by greasing it with butter and dusting it with breadcrumbs, this way it will not stick during cooking.
  4. When the rice is ready, transfer it to a large bowl and let it cool down. Then add the butter, the Parmesan, and the previously beaten eggs. Adjust the salt and pepper according to your taste.
  5. If you have chosen to add vegetables or other ingredients, now gently fold them into the rice mixture.
  6. Pour the mixture into the prepared mold and level it.
  7. Bake in a preheated oven at 180 °C for about 20-25 minutes, or until the timbale is well browned on the surface.
  8. Let the timbale rest for a few minutes before unmolding to avoid breaking.
