Rice Cinnamon and Pear Muffins

Ingredients

  • 100 g of Arborio or Carnaroli rice
  • 250 ml of milk
  • 2 ripe pears
  • 150 g of sugar
  • 2 eggs
  • 100 g of soft butter
  • 200 g of all-purpose flour
  • 1 sachet of baking powder for sweets
  • 1 teaspoon of ground cinnamon
  • A pinch of salt
  • Icing sugar (optional, for decoration)

Preparation

  1. In a small saucepan, bring the milk to a boil with half of the sugar and a pinch of salt. Add the rice and let it cook on low heat until the milk has been almost completely absorbed, stirring occasionally. Let it cool down.
  2. Prepare the pears: peel them, remove the core, and cut them into small cubes.
  3. In a bowl, cream the soft butter with the remaining sugar until smooth. Add the eggs, one at a time, mixing well after each addition.
  4. In another bowl, combine the sifted flour, baking powder, and cinnamon. Add these dry ingredients to the butter and egg mixture, alternating with the cooled cooked rice. Mix everything gently until the batter is uniform.
  5. Finally, gently fold the pear cubes into the batter.
  6. Prepare a muffin tin lined with paper cups and fill them with the batter to about 3/4.
  7. Preheat the oven to 180 °C and bake the muffins for about 20-25 minutes or until they are golden brown and a toothpick inserted in the center comes out clean.
  8. Let the muffins cool on a rack before dusting them with icing sugar, if desired.
