Berry Rice Boats

Berry Rice Boats are a tasty and colorful dish that combines the sweetness of rice with that of the berries. It is a dessert that can be perfect as an end to a meal or as an afternoon snack.

Ingredients

  • 200 g of Carnaroli or Arborio rice
  • 500 ml of milk
  • 1 vanilla pod or a teaspoon of vanilla extract
  • 100 g of granulated sugar
  • 200 g of mixed berries (raspberries, strawberries, blueberries, currants)
  • Fresh mint for garnishing (optional)

Preparation

  1. Start by rinsing the rice under running water to remove excess starch.
  2. Put the milk in a pot, add the sugar and the vanilla pod split lengthwise (or the vanilla extract) and bring to a boil.
  3. When the milk begins to boil, add the rice and let it cook on medium-low heat, stirring occasionally, until the rice has absorbed almost all the milk and reached a creamy consistency (about 18-20 minutes).
  4. In the meantime, wash the berries and dry them gently.
  5. Once the rice has the desired consistency, remove the vanilla pod and let the sweet rice risotto cool down slightly.
  6. Take some boat-shaped molds (or other shapes you prefer) and fill them with the still-warm rice, pressing lightly to create a compact base.
  7. Arrange the berries on the base of cold rice, creating a harmonious mix of colors and flavors.
  8. If you wish, garnish with mint leaves to add a touch of freshness and color.
  9. Serve your Berry Rice Boats at room temperature or slightly chilled.
