Rice and Potato Soup

Rice and potato soup is a typically Italian dish, simple and comforting. Here is the recipe:

Ingredients

  • 200 g of rice
  • 2 medium-sized potatoes
  • 1 small onion
  • Vegetable or chicken broth (about 1 liter, depending on the desired consistency)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • A sprig of rosemary (optional)

Preparation

  1. Peel and finely chop the onion. Peel and cut the potatoes into small cubes.
  2. In a large pot, add a drizzle of extra virgin olive oil and gently fry the onion until it becomes translucent.
  3. Add the diced potatoes and cook for a few minutes, stirring occasionally.
  4. Pour the rice into the pot and toast for about one minute, stirring.
  5. Start gradually adding the hot broth, continuing to stir. Add salt and pepper to taste and, if you like, a sprig of rosemary to flavor.
  6. Continue cooking, adding broth when the rice absorbs the liquids and stirring occasionally.
  7. When the rice is almost fully cooked and the potatoes are soft, adjust with salt and pepper if necessary and remove the sprig of rosemary.
  8. Serve warm with a sprinkling of grated Parmesan cheese if desired.

Curiosity

In some regions of Italy, a bit of shredded cabbage or other types of vegetables are also added to further enrich the flavor of the soup.
