Preparation
- Start by preparing the sauté: finely chop the onion and garlic and fry them in a large saucepan with a drizzle of extra virgin olive oil until they are golden brown.
- Dice the vegetables and add them to the saucepan, letting them cook until they start to soften.
- In the meantime, quickly sauté the shellfish in a pan with a drizzle of oil for 2-3 minutes and set them aside.
- After the vegetables have started to soften, add the peeled tomatoes, crushing them with a wooden spoon. Cook for 5 minutes.
- Add the scorpion fish to the pot and deglaze with the white wine. Add salt and pepper to taste.
- When the alcohol from the wine has evaporated, add fish broth until just covering the scorpion fish and bring to a gentle boil. Cover and cook for about 20 minutes.
- Add the shellfish in the final part of the cooking, allowing them to flavor with the sauce for the last 5-10 minutes.
- Check for salt and, if necessary, adjust the seasoning.
- Sprinkle the dish with chopped fresh parsley before serving.
