Red Wine Granita

Red wine granita is an alcoholic variation of the classic granita, ideal for a cool summer break or as a dessert after dinner. Here’s how to prepare it:

Ingredients

  • 1 bottle of good quality red wine (750 ml)
  • 200 g of granulated sugar
  • 1 cinnamon stick (optional)
  • Zest of one untreated orange (optional)
  • Zest of one untreated lemon (optional)
  • 100 ml of water

Preparation

  1. In a saucepan, bring the water to a boil with the sugar.
  2. If you decide to use the cinnamon and citrus zests, add them to the sugary water and let simmer for about 5 minutes, to create an aromatic syrup.
  3. Remove from heat and let the syrup cool down, then remove the cinnamon stick and citrus zests if you have added them.
  4. Combine the red wine with the syrup and mix well.
  5. Pour the mixture into a shallow, wide tray and put it in the freezer.
  6. After about 2 hours, when it begins to freeze at the edges, break the ice crystals formed with a fork and mix well.
  7. Repeat this process every 30-40 minutes for about 3-4 more times, until the wine takes on a grainy and sorbet-like consistency.
  8. When serving, scrape the granita with a fork to make it fluffy and serve in glasses or bowls.

Curiosity

Red wine granita can also be served as a “sorbet” between courses, especially in a rich menu, because the alcohol content and freshness help to cleanse the palate.
