Red velvet roll

The red velvet roll is a delicious and show-stopping twist on the classic red velvet dessert. Here’s how to prepare it:

Ingredients

  • 4 large eggs
  • 150 g of sugar
  • 1 teaspoon of vanilla essence
  • 2 tablespoons of cocoa powder
  • 1 teaspoon of red gel food coloring
  • 1 pinch of salt
  • 120 g of all-purpose flour
  • 1 teaspoon of baking soda
  • 120 ml of milk
  • White vinegar (one tablespoon to mix with the baking soda)

For the filling and topping:

  • 250 g of cream cheese (like Philadelphia)
  • 100 g of powdered sugar
  • 300 ml of fresh cream to whip
  • 1 teaspoon of vanilla essence

Preparation

  1. Preheat the oven to 180 °C and line a rectangular baking tray with parchment paper.
  2. In a bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  3. Add the vanilla essence, cocoa powder, red coloring, and salt, then mix well.
  4. Combine the sifted flour with the baking soda previously reacted with the white vinegar.
  5. Pour in the milk and mix until you have a smooth and homogeneous batter.
  6. Pour the mixture into the tray and level it with a spatula.
  7. Bake in the oven for about 10-12 minutes or until the surface of the roll appears dry to the touch.
  8. Remove the roll from the oven and turn it out onto a damp cloth. Gently remove the parchment paper and roll the roll up with the cloth. Let it cool completely.
  9. For the filling, whip the fresh cream with the powdered sugar and vanilla essence until you get a thick and satisfying cream. Add the cream cheese and mix gently until the mixture is smooth.
  10. When the roll is cold, gently unroll it and spread the cream evenly on the surface.
  11. Roll the dessert up again without the cloth and wrap it in cling film. Let it rest in the fridge for at least an hour.
  12. Before serving, decorate the red velvet roll with a bit of the remaining cream and, if you like, with red velvet crumbs or powdered sugar.
