17/11/2023I can provide you with a recipe for making Red Velvet Hearts with coffee mousse, which will be a great combination of the intense flavor of coffee and the classic sweetness of Red Velvet.
Ingredients
For the Red Velvet hearts:
- 60 g of soft butter
- 150 g of granulated sugar
- 1 egg
- 1 tablespoon of unsweetened cocoa powder
- Red food coloring (gel or liquid, enough for the desired color)
- 120 ml of buttermilk (or 120 ml of whole milk with 1 teaspoon of lemon juice)
- 150 g of all-purpose flour
- 1/2 teaspoon of baking soda
- 1 teaspoon of white vinegar
For the coffee mousse:
- 200 ml of fresh cream for desserts
- 100 g of white chocolate
- 2 tablespoons of strong espresso coffee
- 2 sheets of gelatin (or 2 g of fish glue)
Preparation
Red Velvet hearts:
- Turn on the oven and preheat it to 180 °C.
- In a bowl, cream the soft butter with the sugar until the mixture is light and fluffy.
- Add the egg and continue to mix.
- Incorporate the cocoa powder and red food coloring until you achieve an even color.
- Alternate adding the sifted flour and the buttermilk, mixing gently.
- In a small glass, mix the baking soda with the white vinegar and immediately pour the mixture into the batter, stirring to combine.
- Pour the batter into greased or parchment-paper-lined heart-shaped molds and bake for about 20-25 minutes. Allow to cool before proceeding with the mousse.
Coffee mousse:
- Soak the gelatin sheets in cold water for about 10 minutes.
- Meanwhile, melt the white chocolate in a double boiler or microwave, being careful not to burn it.
- Heat the espresso coffee in a small pot and dissolve the drained gelatin inside.
- Whip the fresh cream until stiff peaks form.
- Gently fold the melted chocolate into the whipped cream and then add the coffee with the dissolved gelatin, mixing gently to maintain aeration.
- Once the Red Velvet hearts have cooled, top them with the coffee mousse using a pastry bag.
You can serve the Red Velvet hearts with coffee mousse after letting them rest in the refrigerator for at least an hour, to allow the mousse to set.
