Red Truffles

Red truffles are a delicious variation of the classic chocolate truffles, and here’s how you can prepare them.

Ingredients

  • 200 g of good quality dark chocolate
  • 100 g of dry cookies
  • 80 g of butter
  • 50 g of powdered sugar
  • A pinch of salt
  • 2 tablespoons of Amaretto liqueur (or other liqueur of your liking)
  • Cocoa powder to taste
  • Raspberry or strawberry jam

Preparation

  1. Start by finely chopping the dry cookies until you get a powder.
  2. Melt the dark chocolate in a double boiler or in the microwave, being careful not to burn it.
  3. In another container, soften the butter to room temperature and then work it with the powdered sugar and a pinch of salt, until you obtain a smooth and homogeneous cream.
  4. Add the chopped cookies to the cream of butter and sugar, then add the chosen liqueur.
  5. Incorporate the melted chocolate and mix until you get a homogeneous compound.
  6. Put the mixture in the refrigerator for at least an hour, so that it hardens and is easier to work with.
  7. Prepare a small amount of room-temperature jam to fill the truffles.
  8. Once the mixture is well cooled, take small portions and shape them into balls, inserting a bit of jam in the center.
  9. Roll the truffles in the cocoa powder until completely covered.
  10. Keep the red truffles in the refrigerator until it’s time to serve them.
