Red Truffles
17/11/2023Red truffles are a delicious variation of the classic chocolate truffles, and here’s how you can prepare them.
Ingredients
- 200 g of good quality dark chocolate
- 100 g of dry cookies
- 80 g of butter
- 50 g of powdered sugar
- A pinch of salt
- 2 tablespoons of Amaretto liqueur (or other liqueur of your liking)
- Cocoa powder to taste
- Raspberry or strawberry jam
Preparation
- Start by finely chopping the dry cookies until you get a powder.
- Melt the dark chocolate in a double boiler or in the microwave, being careful not to burn it.
- In another container, soften the butter to room temperature and then work it with the powdered sugar and a pinch of salt, until you obtain a smooth and homogeneous cream.
- Add the chopped cookies to the cream of butter and sugar, then add the chosen liqueur.
- Incorporate the melted chocolate and mix until you get a homogeneous compound.
- Put the mixture in the refrigerator for at least an hour, so that it hardens and is easier to work with.
- Prepare a small amount of room-temperature jam to fill the truffles.
- Once the mixture is well cooled, take small portions and shape them into balls, inserting a bit of jam in the center.
- Roll the truffles in the cocoa powder until completely covered.
- Keep the red truffles in the refrigerator until it’s time to serve them.
Curiosity
Chocolate truffles are named after the similarly-named prized fungus because of their aesthetic resemblance, as well as their exclusivity and sophistication. The red variant with raspberry or strawberry jam adds a touch of sweet acidity that pleasantly contrasts with the intense flavor of chocolate.
They are perfect to serve as a refined end to a meal or to accompany coffee. Enjoy your meal!
