Red Tomato Ravioli

Red Tomato Ravioli is a delicious dish that combines homemade pasta with a flavorful filling, usually made with cheese or meat, and of course the red color of tomatoes. Here is a basic recipe for these ravioli:

Ingredients

For the ravioli:

  • 200 g of semolina flour
  • 2 large eggs
  • 1 tablespoon of tomato paste (for the red color)
  • Salt, as needed

For the filling:

  • 250 g of fresh ricotta cheese
  • 50 g of grated Parmesan cheese
  • Salt and pepper, as needed
  • A pinch of nutmeg (optional)
  • Fresh basil, chopped (optional)

For the sauce:

  • 500 g of peeled tomatoes or tomato purée
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and fresh basil

Preparation

  1. Start with the preparation of the dough for the ravioli. In a large bowl, pour the flour and make a well in the center where you will add the eggs, tomato paste, and a pinch of salt. Begin to mix the ingredients starting from the center and gradually incorporate the flour until you have a homogeneous mixture. Knead the dough on a lightly floured surface for about 10 minutes, then wrap it in cling film and let it rest for at least 30 minutes.

  2. While the dough is resting, prepare the filling. In a bowl, mix the ricotta with the Parmesan, salt, pepper, and if desired, a pinch of nutmeg and chopped basil. Taste and adjust the seasoning if necessary.

  3. Now take the ravioli dough and roll it out with a rolling pin or pasta machine to get a thin sheet. With a pastry cutter or glass, cut out circles of dough.

  4. Place a small amount of filling in the center of each circle and then close the ravioli, sealing the edges after brushing them with a little water or egg to help seal.

  5. Bring a large pot of salted water to a boil and cook the ravioli for about 3-4 minutes or until they float to the surface.

  6. Meanwhile, prepare the sauce by simply sautéing the garlic in a bit of extra virgin olive oil. Add the peeled tomatoes or tomato purée, salt, and cook for about 15-20 minutes on medium-low heat, at the end of cooking adjust the salt if necessary and add chopped fresh basil.

  7. Drain the ravioli and serve them topped with the tomato sauce and a sprinkling of Parmesan cheese.
