Ingredients

  • 12 medium-sized red prawns
  • 200 g of white grapes (preferably seedless)
  • 1 glass of dry white wine

Preparation

  1. Start by cleaning the prawns: remove the head, tail, carapace, and intestine with the help of a toothpick. Set aside.

  2. Wash the grapes and detach the berries from the bunch. If the grapes are not seedless, cut the berries in half and remove the seeds.

  3. In a large frying pan, heat a drizzle of oil with the garlic cloves (crushed with the blade of a knife or sliced), until the garlic is golden brown.

  4. Add the prawns to the pan and sauté for about 2 minutes per side, over high heat. Season with salt and pepper to your taste.

  5. Deglaze the prawns with the glass of white wine and let the alcohol evaporate for a few minutes.

  6. Add the grape berries to the pan and cook for another 4-5 minutes until the grapes become slightly soft but still whole.

  7. Sprinkle with chopped fresh parsley before turning off the heat and gently stir to distribute the aroma.

  8. Plate the prawns with the grapes and a drizzle of raw oil, if desired.
