Red Pizza

Red pizza is a variant of traditional pizza, many also call it “tomato pizza” because of its main characteristic: the absence of mozzarella. Here is the recipe for preparing a homemade red pizza.

Ingredients

  • 250g of type 00 flour
  • 150ml of lukewarm water
  • 6g of fresh brewer’s yeast (or 2g of dry brewer’s yeast)
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon of olive oil
  • Tomato puree as needed
  • 2 cloves of garlic (optional)
  • Dried oregano as needed
  • Salt as needed
  • A drizzle of extra virgin olive oil

Preparation

  1. In a large bowl, dissolve the yeast and sugar in lukewarm water and let rest for a few minutes until it starts forming bubbles.
  2. Add flour, salt, and olive oil. Knead until you get a smooth and homogeneous mixture. Work the dough for about 10 minutes, then form a ball.
  3. Place the dough in a floured bowl, cover it with a damp cloth, and let it rise in a warm place without drafts for about 2 hours, or until it doubles in size.
  4. Meanwhile, prepare the red sauce. If you wish to add garlic, start by browning the garlic cloves in a pan with a drizzle of olive oil. Then, add the tomato puree, salt, and oregano and cook on a low heat for about 15 minutes. Remove the garlic before using the sauce.
  5. Preheat the oven to 250°C, if you have a baking stone place it inside so that it heats up well.
  6. Stretch the dough to form the base of the pizza, creating a slightly higher edge on the sides.
  7. Spread the red sauce over the dough’s surface.
  8. Bake the pizza on the baking stone or on a lightly floured baking tray for about 10-15 minutes, or until the edges are golden and the bottom is crispy.
  9. Take the pizza out of the oven, add a drizzle of extra virgin olive oil, and if you like, other aromatic herbs such as fresh basil or rosemary.
