Gurnard in Mediterranean Sauce

The gurnard, also known as gurnard fish, is a delicately flavored fish that lends itself well to recipes with light and tasty sauces like the Mediterranean one. Here’s how to prepare gurnard in Mediterranean sauce:

Ingredients

  • 4 gurnard fillets
  • 250 g cherry tomatoes
  • 1 small white or red onion
  • 2 cloves of garlic
  • 20 pitted black olives
  • 2 tablespoons of desalted capers
  • A handful of finely chopped fresh parsley
  • 100 ml of dry white wine
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation

  1. Begin by rinsing the gurnard fillets under running water and pat them dry with kitchen paper. Season with salt and pepper lightly.
  2. In a large pan, heat a drizzle of extra virgin olive oil and lightly brown the finely chopped onion with the peeled garlic cloves left whole.
  3. Add the gurnard fillets and cook for about 2 minutes per side, then deglaze with the white wine and let the alcohol evaporate.
  4. Cut the cherry tomatoes in half and add them to the pan along with the black olives and capers.
  5. Adjust with salt and pepper, lower the heat and let it cook for another 10-15 minutes, until the sauce has thickened slightly and the fish fillets are cooked through.
  6. Just before turning off the heat, sprinkle with chopped fresh parsley to add freshness and aroma to the dish.
  7. Serve the gurnard hot, possibly accompanied by a light side dish like grilled vegetables or a fresh salad.
