Red Pizzettes

Red pizzettes are tantalizing appetizers that can be served as a starter or to accompany an aperitif. Here is the recipe to prepare them:

Ingredients

  • 250 g of type 00 flour
  • 12 g of fresh brewer’s yeast (or 4 g of dry brewer’s yeast)
  • 150 ml of lukewarm water
  • A pinch of salt
  • A pinch of sugar
  • 2 tablespoons of extra virgin olive oil
  • 150 g of tomato puree
  • Dry oregano to taste
  • Salt to taste
  • Mozzarella (or other stringy cheese as desired) to taste
  • Black olives to taste (optional)

Preparation

  1. Start by dissolving the brewer’s yeast in lukewarm water with a pinch of sugar.
  2. In a large bowl, sift the flour and make a well in the center where you will pour the water with the yeast. Add the salt and olive oil.
  3. Begin to knead starting from the center, gradually incorporating the flour, until you get a smooth and elastic dough.
  4. Form a ball with the dough and let it rise covered in a warm place free from draughts until it doubles in volume, about 1-2 hours.
  5. Preheat the oven to 200 °C.
  6. Roll out the dough on a lightly floured surface until it is about half a centimeter thick.
  7. Use a pastry cutter or a glass to cut out discs of dough.
  8. Arrange the discs on a baking tray lined with parchment paper, being careful to leave a little space between each one.
  9. Distribute a tablespoon of tomato puree on each pizzette, add a pinch of salt and dry oregano on top of the tomato puree.
  10. Add the mozzarella (or chosen cheese) cut into small cubes and, if you like, a black olive in the center.
  11. Bake the pizzettes and cook for about 10-15 minutes or until the edges are golden.

The red pizzettes are ready when the cheese has melted well and the edges are golden and crispy. Serve them hot or at room temperature.
