Red Berry Sorbet

Ingredients

  • 500 g of mixed red berries (raspberries, strawberries, currants, etc.)
  • 150 g of sugar
  • 200 ml of water
  • Juice of 1 lemon
  • (Optional) 2 tablespoons of limoncello or grappa

Preparation

  1. Start by preparing a simple syrup by bringing water and sugar to a boil in a small pot, stirring until the sugar is completely dissolved. Let the syrup cool completely.
  2. In the meantime, wash the red berries and blend them in a mixer until smooth.
  3. Strain the berry puree through a sieve to remove the seeds and obtain a smooth liquid.
  4. Combine the cooled simple syrup, lemon juice, and red berry puree. If you have decided to add liquor, this is the time to incorporate the limoncello or grappa.
  5. Pour the mixture into an ice cream maker and follow the machine’s instructions to churn the sorbet. If you don’t have an ice cream maker, pour the mixture into a freezer-safe container and place it in the freezer. Stir the sorbet every 30-60 minutes to break up the ice crystals until it reaches a smooth consistency.
  6. Once the sorbet has achieved the right consistency, transfer it to a container with a lid and leave it in the freezer until it’s time to serve.

Serve the sorbet in cold bowls, and if you feel like decorating, add some whole berries and a mint leaf for a touch of color and freshness.
