Red Cabbage Salad

Ingredients
- 1 medium-sized red cabbage
- 2 carrots
- 1 apple (if you prefer a touch of sweetness)
- Lemon juice
- Extra virgin olive oil
- Salt
- Black pepper (optional)
- Sesame seeds or sunflower seeds (for a crispy touch)
- Balsamic vinegar or apple cider vinegar (to taste)
Preparation
- Wash the red cabbage and remove the tougher outer leaves. Cut the cabbage in half and remove the core. Slice the cabbage as thinly as possible to obtain thin strips.
- Peel the carrots and grate them, or if you prefer a crunchier effect, cut them into julienne strips.
- Peel the apple, remove the core and cut it into thin slices or cubes, depending on your preference. To prevent oxidation, you might want to squeeze some lemon juice over the apple slices.
- In a large bowl, combine the red cabbage, carrots, and apple. Mix gently.
- Season with lemon juice, a pinch of salt, and black pepper to taste. Add the extra virgin olive oil and, if you like, a touch of vinegar.
- Mix the salad well to ensure the dressing is evenly distributed.
- If desired, add the sesame seeds or sunflower seeds for an extra crunch.
- Let the salad rest in the fridge for at least 30 minutes before serving, so that the flavors can blend well together.
