Raw Strawberry Tart

The raw strawberry tart is a delicious and fresh dessert, perfect for a summer day or for those following a raw vegan diet. Here is how to prepare it:

Ingredients

  • For the base:

    • 200 g of almonds
    • 100 g of pitted dates
    • 1 pinch of salt
  • For the cream:

    • 200 g of cashews, soaked for 4-6 hours
    • 100 ml of coconut milk
    • 2 tablespoons of maple syrup (or another sweetener of choice)
    • 1 teaspoon of vanilla extract
  • For the topping:

    • Fresh strawberries to taste
    • Blueberries or other berries for decoration (optional)

Preparation

  1. Start by preparing the base: put the almonds in a food processor and pulse until you get a coarse flour. Add the dates and the pinch of salt and blend until the mixture begins to stick together forming a “dough”.
  2. Line the bottom of a pie dish with parchment paper and press the mixture onto the base creating an even and compact layer. Let the mixture slightly rise along the edges to form the tart border. Place in the refrigerator to rest.
  3. For the cream, drain the soaked cashews and place them in a high-powered blender along with the coconut milk, maple syrup, and vanilla extract. Blend until you achieve a smooth and silky cream.
  4. Pour the cashew cream over the almond base and level the surface with a spatula.
  5. Wash the strawberries and slice them or leave them whole, depending on your preference. Arrange them artistically on the cream, and if you wish, add other berries to decorate.
  6. Let the raw tart set in the refrigerator for at least 4 hours before serving.

This raw tart does not require baking and retains all the nutritional properties of the ingredients used. It is important to use quality products and possibly organic for an optimal result.
