Ingredients
- 250 g of type 00 flour
- 2 large eggs
- 250 g of fresh ricotta
- 70 g of granulated sugar
- 100 g of chocolate chips
- Grated zest of 1 untreated lemon (optional for a touch of freshness)
- A pinch of salt
- Water as needed to bind the dough (if necessary)
- Icing sugar for decorating (optional)

Prepare the dough for the ravioli: in a large bowl, place the flour and make a well in the center. Break the eggs into it and add a pinch of salt. Start to knead first with a fork incorporating the flour gradually, and then continue with your hands until you have a smooth and elastic ball of dough. If necessary, add a little water to help gather the flour. Wrap the dough in plastic wrap and let it rest for about 30 minutes.
