  • 250 g of type 00 flour
  • 2 large eggs
  • 250 g of fresh ricotta

Preparation

  1. Prepare the dough for the ravioli: in a large bowl, place the flour and make a well in the center. Break the eggs into it and add a pinch of salt. Start to knead first with a fork incorporating the flour gradually, and then continue with your hands until you have a smooth and elastic ball of dough. If necessary, add a little water to help gather the flour. Wrap the dough in plastic wrap and let it rest for about 30 minutes.
