Ravioli with Cheese Cream
17/11/2023Here’s a recipe to prepare delicious Italian cheese cream ravioli.
Ingredients
For the pasta:
- 300 g of type 00 flour
- 3 large eggs
- A pinch of salt
For the filling:
- 250 g of ricotta
- 100 g of grated cheese (parmesan, pecorino, or a mix)
- Salt and pepper to taste
For the cheese cream:
- 200 ml of cream
- 100 g of soft cheese (such as gorgonzola, taleggio, or a creamy cheese of your choice)
- Salt and pepper to taste
- Nutmeg (optional)
Preparation

Begin with preparing the pasta. Pour the flour on a pastry board, make a well, add the eggs and a pinch of salt in the center, and start kneading until the dough is smooth and uniform. Let the pasta rest, wrapped in cling film, for at least 30 minutes.

While the pasta is resting, prepare the filling by mixing the ricotta with the grated cheese. Add salt and pepper as desired.

Roll out the dough into thin sheets using a pasta machine or a rolling pin. Cut out circles with a pastry cutter or a glass.

Put a teaspoon of filling in the center of each dough circle, then fold them in half and seal the edges to form half-moon ravioli. Make sure the edges are well sealed.

Prepare the cheese cream by heating the cream in a pan over medium heat. When hot, add the soft cheese in pieces, stirring until it has completely melted. Season with salt, pepper, and nutmeg to your taste.

Cook the ravioli in plenty of boiling salted water for about 4 minutes, or until they float to the surface.

Drain the ravioli carefully and dress them with the warm cheese cream.

Plate and, if desired, sprinkle with additional grated cheese before serving.
