Ingredients

    • Salt and pepper to taste

Preparation

  1. Start by preparing the dough for the ravioli: pour the flour into a heap on a work surface, add the eggs and a pinch of salt in the center, and start kneading until you have a smooth and elastic dough. Cover with a cloth and let it rest for about 30 minutes.
  2. In the meantime, prepare the filling. Boil the potatoes in boiling water until they are soft. Drain them, peel them, and crush them with a potato masher.
  3. In a frying pan, sauté the chopped garlic with a stream of oil, add the shrimp and cook until they turn pink. Remove the garlic and roughly chop the shrimp.
  4. Mix the shrimp with the potatoes, add chopped parsley, salt, and pepper to taste, and mix until you have a homogeneous mixture.
  5. Roll out the ravioli dough into thin sheets. Place small amounts of filling on one half, spaced apart from each other. Cover with the other half of the dough and cut out the ravioli with a pastry cutter or a specific mold. Make sure to seal the edges well.
  6. Cook the ravioli in plenty of salted water for about 3-4 minutes or until they float to the surface.
  7. While the ravioli are cooking, prepare a simple sauce by melting butter in a pan and adding a few leaves of sage.
  8. Drain the ravioli and transfer them to the pan with the sage-flavored butter, tossing them for a minute.
  9. Serve the hot ravioli, topped with Parmesan cheese flakes.
