Raspberry Coulis

Raspberry coulis is a sweet and velvety sauce that pairs beautifully with desserts like cheesecake, ice cream, panna cotta, or simply with a nice portion of fresh fruit. Here’s how to prepare it:

Ingredients

  • 250 g of fresh or frozen raspberries
  • 50 g of powdered sugar (or to taste depending on the desired sweetness)
  • 1 tablespoon of lemon juice (optional)
  • A little water (if necessary)

Preparation

  1. In a blender or with an immersion mixer, blend the raspberries until you have a smooth puree.
  2. Strain the puree through a fine sieve to remove all the seeds and get a smooth coulis.
  3. Add the powdered sugar to the coulis and mix until it is completely dissolved. If you have chosen to use lemon juice, add it at this step.
  4. Taste and adjust the sweetness if necessary. If the coulis is too thick, you can add a little water to reach the desired consistency.
  5. Store the raspberry coulis in the refrigerator in a tightly sealed container until ready to use.

Raspberry coulis can be prepared in advance and, if stored properly, remains fresh for several days in the refrigerator. It can also be frozen if you want to keep it available for future use.

For an Italian touch, you might use the raspberry coulis as an accompaniment for a summery version of tiramisu, replacing the coffee and cocoa with raspberries for a unique and refreshing flavor. Furthermore, raspberries are often used in the preparation of some aperitifs and cocktails, so you could consider using the coulis in these recipes to add a sweet and fruity touch.
