Raspberry and White Chocolate Cupcakes
17/11/2023Raspberry white chocolate cupcakes are a sweet and delicious treat, a perfect combination of the tartness of raspberries and the sweetness of white chocolate. Here is the recipe to delight your palate.
Ingredients
- 150 g of all-purpose flour
- 150 g of granulated sugar
- 125 g of butter at room temperature
- 2 large eggs
- 1/2 teaspoon of vanilla extract
- 1 teaspoon of baking powder
- A pinch of salt
- 120 ml of whole milk
- 100 g of fresh or frozen raspberries
- 100 g of white chocolate, chopped or in chips
For the frosting:
- 250 g of cream cheese (like Philadelphia)
- 50 g of soft butter
- 100 g of melted and cooled white chocolate
- 60 g of powdered sugar
- Fresh raspberries for decoration
Preparation
- Preheat the oven to 180 °C and prepare a baking tray with cupcake liners.
- In the bowl of a stand mixer or using an electric hand mixer, cream the soft butter with the sugar until the mixture is light and fluffy.
- Add the eggs, one at a time, beating well and then incorporate the vanilla extract.
- In a separate bowl, mix the flour, baking powder, and salt. Fold this dry mixture into the wet ingredients, alternating with the milk, starting and ending with the dry ingredients.
- Gently fold the raspberries and white chocolate pieces into the batter with a spatula.
- Fill the cupcake liners about 2/3 full and bake in the oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before proceeding with the frosting.
For the frosting:
- Beat the cream cheese and butter until smooth.
- Add the melted white chocolate and powdered sugar, and mix until the frosting is smooth and spreadable.
- Use a piping bag with a star nozzle to decorate the cooled cupcakes with the frosting.
- Top each cupcake with a fresh raspberry.
Curiosity
Cupcakes, often confused with muffins, are actually quite different. The main difference lies in the texture and decoration; cupcakes tend to be softer and are almost always topped with frosting, making them more like individual little cakes!
