Raspberry and White Chocolate Cupcakes

Raspberry white chocolate cupcakes are a sweet and delicious treat, a perfect combination of the tartness of raspberries and the sweetness of white chocolate. Here is the recipe to delight your palate.

Ingredients

  • 150 g of all-purpose flour
  • 150 g of granulated sugar
  • 125 g of butter at room temperature
  • 2 large eggs
  • 1/2 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 120 ml of whole milk
  • 100 g of fresh or frozen raspberries
  • 100 g of white chocolate, chopped or in chips

For the frosting:

  • 250 g of cream cheese (like Philadelphia)
  • 50 g of soft butter
  • 100 g of melted and cooled white chocolate
  • 60 g of powdered sugar
  • Fresh raspberries for decoration

Preparation

  1. Preheat the oven to 180 °C and prepare a baking tray with cupcake liners.
  2. In the bowl of a stand mixer or using an electric hand mixer, cream the soft butter with the sugar until the mixture is light and fluffy.
  3. Add the eggs, one at a time, beating well and then incorporate the vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and salt. Fold this dry mixture into the wet ingredients, alternating with the milk, starting and ending with the dry ingredients.
  5. Gently fold the raspberries and white chocolate pieces into the batter with a spatula.
  6. Fill the cupcake liners about 2/3 full and bake in the oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely before proceeding with the frosting.

For the frosting:

  1. Beat the cream cheese and butter until smooth.
  2. Add the melted white chocolate and powdered sugar, and mix until the frosting is smooth and spreadable.
  3. Use a piping bag with a star nozzle to decorate the cooled cupcakes with the frosting.
  4. Top each cupcake with a fresh raspberry.
