Raisin Muffins

Raisin muffins are a classic dessert perfect for breakfast or a sweet break during the day. Here is a recipe with a small Italian twist.

Ingredients

  • 300 g of all-purpose flour
  • 150 g of sugar
  • 2 eggs
  • 100 g of melted butter
  • 150 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract (or vanillin)
  • 200 g of raisins
  • Grated zest of 1 lemon (for a fresh and Italian note)

Preparation

  1. Begin by softening the raisins by soaking them in warm water or, if you want to add a special touch, in orange blossom water, for about 10-15 minutes. This step will help make the raisins soft and pleasant to bite.

  2. Take a bowl and sift together the flour, baking powder, and pinch of salt. Also add the lemon zest to flavor the dough.

  3. In another bowl, beat the eggs with the sugar until you get a light and fluffy mixture. We can then add melted butter and vanilla extract, continuing to mix.

  4. Now add the egg and sugar mixture to the flour mix, alternating with milk to make the batter more homogenous and without lumps.

  5. Drain the raisins from the water and dry them well, then dust them slightly with flour (this will prevent the raisins from settling at the bottom during baking). Add them to the batter and gently mix to distribute them evenly.

  6. Prepare a muffin tin, lining it with paper cups, and fill each cup with our batter for about 3/4 of their height.

  7. Bake in a preheated oven at 180 °C for about 20 minutes or until the muffins are golden and, when tested with a toothpick, it comes out clean.

  8. Let the muffins cool on a wire rack before serving.
