Rainbow Whoopie

Whoopie Pies are soft, round treats typical of American tradition, often filled with buttercream, marshmallow, or cheese. The rainbow version makes these treats even more enchanting and colorful. Here is the recipe with an Italian twist:

Ingredients for the dough:

  • 250 g of plain flour
  • 150 g of sugar
  • 75 g of soft butter
  • 1 egg
  • 120 ml of milk
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • Gel food coloring (red, orange, yellow, green, blue, and purple)

Ingredients for the filling:

  • 250 g of cream cheese (like Philadelphia)
  • 100 g of powdered sugar
  • 1 teaspoon of vanilla extract

Preparation

  1. Preheat the oven to 170 °C and prepare baking sheets lined with parchment paper.
  2. In a bowl, mix the flour, baking powder, and baking soda.
  3. In another bowl, whisk the butter with the sugar until fluffy. Add the egg and vanilla extract and continue to beat.
  4. Fold in the dry ingredients alternately with the milk, mixing until you have a smooth batter.
  5. Divide the batter into equal parts for each color of the rainbow and color each part with the food coloring.
  6. Use a teaspoon or a piping bag to form small portions of batter on the parchment sheets, leaving a bit of space between each.
  7. Bake in the oven for 10-12 minutes or until they are risen and slightly golden.
  8. Let the bases cool completely on a wire rack after removing them from the oven.

For the filling:

  1. Beat the cream cheese with the powdered sugar and vanilla extract until you achieve a smooth, spreadable cream.
  2. Once the Whoopie bases are cold, spread or use a piping bag to apply the filling on one half and cover with another to form a sandwich.

Your Rainbow Whoopie Pies are ready! Remember to keep them in the fridge if you don’t consume them immediately, since the cream cheese filling is quite delicate.
