Rainbow Cake

Ingredients
- 300 g of all-purpose flour
- 300 g of granulated sugar
- 5 large eggs at room temperature
- 250 g of unsalted butter, softened
- 250 ml of whole milk at room temperature
- 1 tablespoon of vanilla extract
- 3 teaspoons of baking powder
- 1 pinch of salt
- Gel food coloring (red, orange, yellow, green, blue, violet)
For the buttercream:
- 300 g of unsalted butter, softened
- 600 g of powdered sugar
- 2-3 tablespoons of whole milk
- 1 teaspoon of vanilla extract
Preparation
- Preheat the oven to 180 °C and prepare six 15-20 cm diameter round pans by greasing and flouring them, or lining them with parchment paper.
- In a large bowl, beat the butter with sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
- Add the vanilla extract and mix well.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until no lumps are visible.
- Divide the batter into six equal parts and color each one with gel food coloring, one for each color of the rainbow.
- Pour the batters into the prepared pans and level the surface.
- Bake in the oven for 15-20 minutes or until a toothpick inserted in the center of each cake comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely before decorating.
For the buttercream:
- Beat the butter until creamy.
- Gradually add the powdered sugar alternating with milk and vanilla extract, until a spreadable and fluffy consistency is achieved.
Assembly:
- Level the cakes if necessary by slicing the top off.
- Start with the first layer of cake and spread an even layer of buttercream on top.
- Continue layering the remaining colors of the cake, spreading the cream between each layer.
- Once all the layers are stacked, cover the entire cake with a thin layer of buttercream to seal in the crumbs.
- Place the Rainbow Cake in the refrigerator for at least 30 minutes.
- Afterward, apply a second layer of buttercream to achieve a smooth and clean finish.
