Ferrovia cookies
17/11/2023Ferrovia cookies are a typical Sicilian dessert, known for their chocolate filling enclosed between two layers of shortcrust pastry. Here’s how to prepare them.
Ingredients
- 300 g of type 00 flour
- 100 g of sugar
- 100 g of cold butter
- 1 egg
- 1 egg yolk
- 1 packet of vanillin
- 1 teaspoon of baking powder
- Grated zest of 1 lemon
- A pinch of salt
For the filling:
- 150 g of dark chocolate
- 100 g of apricot jam
Preparation
- To start, prepare the shortcrust pastry. In a large bowl, sift the flour with the baking powder and add sugar, vanillin, grated lemon zest, and a pinch of salt.
- Add the cold butter cut into small pieces and start to work it with your fingertips until you get a sandy mixture.
- Make the classic well with the flour mixture and in the center, add the whole egg and the yolk. Begin kneading until you have a smooth, homogeneous dough, forming a ball.
- Wrap the shortcrust pastry in plastic wrap and let it rest in the fridge for at least 30 minutes.
- In the meantime, melt the dark chocolate in a double boiler.
- Roll out the pastry into two thin sheets. Using a round cookie cutter, cut out numerous discs from one of the shortcrust pastry sheets.
- On half of the discs, spread a bit of apricot jam and a layer of melted chocolate, taking care to leave the edge free.
- Cover each filled pastry disc with another disc and press the edges well to seal.
- Arrange the cookies on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 15-20 minutes or until golden.
- Let the cookies cool before serving.
Once cool, your ferrovia cookies are ready to be enjoyed accompanied by a good tea or a cup of coffee.
Curiosity
The name “ferrovia” probably comes from the fact that these cookies were offered in the bar carriages of the State Railways, becoming a pleasant accompaniment for travelers. The combination of shortcrust pastry, chocolate, and jam creates a highly appreciated contrast of flavors. And let’s not forget that this cookie is also a great way to celebrate Sicilian traditions!
