Ferrovia cookies

Ferrovia cookies are a typical Sicilian dessert, known for their chocolate filling enclosed between two layers of shortcrust pastry. Here’s how to prepare them.

Ingredients

  • 300 g of type 00 flour
  • 100 g of sugar
  • 100 g of cold butter
  • 1 egg
  • 1 egg yolk
  • 1 packet of vanillin
  • 1 teaspoon of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt

For the filling:

  • 150 g of dark chocolate
  • 100 g of apricot jam

Preparation

  1. To start, prepare the shortcrust pastry. In a large bowl, sift the flour with the baking powder and add sugar, vanillin, grated lemon zest, and a pinch of salt.
  2. Add the cold butter cut into small pieces and start to work it with your fingertips until you get a sandy mixture.
  3. Make the classic well with the flour mixture and in the center, add the whole egg and the yolk. Begin kneading until you have a smooth, homogeneous dough, forming a ball.
  4. Wrap the shortcrust pastry in plastic wrap and let it rest in the fridge for at least 30 minutes.
  5. In the meantime, melt the dark chocolate in a double boiler.
  6. Roll out the pastry into two thin sheets. Using a round cookie cutter, cut out numerous discs from one of the shortcrust pastry sheets.
  7. On half of the discs, spread a bit of apricot jam and a layer of melted chocolate, taking care to leave the edge free.
  8. Cover each filled pastry disc with another disc and press the edges well to seal.
  9. Arrange the cookies on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 15-20 minutes or until golden.
  10. Let the cookies cool before serving.

Once cool, your ferrovia cookies are ready to be enjoyed accompanied by a good tea or a cup of coffee.

Curiosity

The name “ferrovia” probably comes from the fact that these cookies were offered in the bar carriages of the State Railways, becoming a pleasant accompaniment for travelers. The combination of shortcrust pastry, chocolate, and jam creates a highly appreciated contrast of flavors. And let’s not forget that this cookie is also a great way to celebrate Sicilian traditions!
