Radish Omelette

The radish omelette is a light, springtime dish that combines the slightly spicy flavor of radishes with the softness of eggs. Here’s the recipe for a radish omelette à l’italienne.

Ingredients

  • 6 eggs
  • 1 bunch of radishes
  • 2 tablespoons of grated Parmesan cheese
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped chives (optional)

Preparation

  1. Clean the radishes by removing the roots and leaves. Rinse the radishes well and slice them thinly.
  2. In a non-stick skillet, heat a tablespoon of extra virgin olive oil and add the radish slices. Sauté them lightly until they become just soft and slightly golden.
  3. Beat the eggs in a bowl, add the grated Parmesan, salt, pepper, and if you like, some chopped chives.
  4. Pour the egg mixture over the radishes in the skillet, lower the flame, and cover with a lid. Cook until the bottom of the omelette is set and the top is almost cooked through.
  5. To flip the omelette, use a plate or a lid larger than the skillet. Cover the skillet with the plate and flip decisively to overturn the omelette. Then return the omelette to the skillet to finish cooking on the other side.
  6. Once cooked, you can serve the radish omelette hot or at room temperature.
