Radicchio Strudel
17/11/2023Radicchio strudel is a creative dish that combines Austrian tradition with Venetian flavors. Here is a variation on the authentic strudel recipe with radicchio.
Ingredients
- 1 roll of puff pastry or strudel dough
- 300 g of Treviso or Chioggia red radicchio
- 1 small onion
- 100 g of fresh goat cheese or other soft cheese
- 50 g of chopped walnuts
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Melted butter to taste (for brushing the dough)
- Poppy or sesame seeds (optional, to garnish)
Preparation
- Begin by cleaning the radicchio and cutting it into thin strips. Sauté the finely chopped onion in a pan with extra virgin olive oil until golden.
- Add the radicchio to the pan and cook until softened. During cooking, add salt and pepper to taste.
- Preheat the oven to 180 °C (350 °F).
- Roll out the puff pastry or strudel dough on a lightly floured surface. If using puff pastry, remember to dock it with a fork.
- Spread the cooked radicchio on the dough, leaving a margin along the edges. Add the goat cheese in small pieces and the chopped walnuts on top.
- Roll the dough over the filling starting from the long side, seal the edges well and fold the ends under the strudel to prevent the filling from leaking out during cooking.
- Brush the surface of the strudel with melted butter, and if desired, sprinkle with poppy or sesame seeds for extra crunch.
- Place the strudel on a baking sheet lined with parchment paper and bake in the oven for about 25-30 minutes or until golden brown and crispy.
- Allow to cool for a few minutes before cutting and serving.
