Radicchio rolls
17/11/2023Radicchio rolls are a tasty and colorful dish, perfect for a fancy appetizer or an elegant side dish. Here I will present a classic version, but remember that you can always customize it to your taste.
Ingredients
- 1 head of Treviso radicchio
- 150 g of soft cheese (such as stracchino or goat cheese)
- 50 g of chopped walnuts
- Parmesan flakes or grated Parmesan (amount to taste)
- Salt and pepper (to taste)
- Extra virgin olive oil
- Balsamic vinegar or balsamic reduction (optional, for decorating)
Preparation

Wash the radicchio leaves well and select the largest and most intact for the rolls. Gently pat them dry.

In a bowl, mix the chosen cheese with the chopped walnuts, adding salt and pepper to taste to flavor the filling.

Place a suitable amount of the cheese and walnut filling at the base of each radicchio leaf.

Gently roll the leaf to form the roll, and secure the end with a toothpick if necessary to maintain the shape.

Arrange the rolls on a slightly oiled baking tray or on parchment paper.

Drizzle the rolls with a little oil and distribute the Parmesan flakes or grated Parmesan over each.

Bake the rolls in a preheated oven at 180 °C (356 °F) for about 10-15 minutes, or until the cheese is slightly golden and melted.

Once ready, gently remove the toothpicks and serve the rolls hot, drizzled with balsamic vinegar or a balsamic reduction for an extra touch of flavor and elegance.
