Radicchio and Sausage Lasagna

Radicchio and sausage lasagna is a delicious dish that combines the intense and slightly bitter flavors of radicchio with the succulence and spiciness of sausage. Here is how to prepare it:

Ingredients

  • 250 g of egg lasagna (ideally fresh)
  • 400 g of red radicchio
  • 350 g of sausage
  • 250 g of bechamel sauce
  • 200 g of grated cheese (Parmesan or pecorino)
  • 1 small onion
  • 1 glass of white wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Nutmeg to taste

Preparation

  1. Start by cleaning the radicchio, removing the stem and any damaged leaves. Cut it into strips and wash under running water.
  2. In a pan, fry a chopped onion until it becomes translucent. Add the crumbled sausage and let it brown until it changes color.
  3. Deglaze with a glass of white wine and allow the alcohol to evaporate.
  4. Add the radicchio to the sausage and cook for a few minutes. The radicchio should soften but not disintegrate completely. Season with salt and pepper.
  5. Prepare a thick bechamel sauce flavored with nutmeg to your liking and adjust this also for salt.
  6. In a baking dish, start with a layer of bechamel, then arrange the lasagna sheets, followed by a layer of radicchio and sausage and sprinkle with grated cheese.
  7. Continue alternating the layers until all the ingredients are used up, finishing with bechamel and a generous dusting of cheese.
  8. Bake in a preheated oven at 180 °C for about 30-40 minutes or until the surface of the lasagna is golden brown and crispy.
  9. Let the lasagna rest for 10 minutes before serving, to allow the layers to stabilize and become easier to cut.
