Ingredients
- 1 head of red radicchio
- 1 large apple, preferably of a crispy and sweet-tart variety such as Fuji or Granny Smith
- Juice of 1/2 lemon
- Extra virgin olive oil to taste
- Salt to taste
- Black pepper to taste (optional)
- Parmesan or shaved Parmigiano cheese (optional)
- Toasted walnuts or pine nuts for garnish (optional)
Preparation
- Wash the radicchio under running water, dry it, and cut it into not-too-fine strips.
- Wash the apple, dry it, and cut it into thin slices or cubes, depending on your preference. You can choose to peel it or not.
- Dip the apple slices or cubes in lemon juice to prevent them from oxidizing and losing their color.
- In a large bowl, combine the radicchio and apple, seasoning with extra virgin olive oil, salt, and a pinch of black pepper, if you like.
- Mix the ingredients carefully to evenly distribute the dressing.
