Ingredients
- 1 rabbit cut into pieces
- 500 ml of light beer
- 400 g of cherry tomatoes
- 2 cloves of garlic
- 1 sprig of rosemary
- Extra virgin olive oil
- Salt and pepper
- Sugar
- 1 onion
- Flour (for dusting the rabbit)
For cherry tomato confit:
- Cherry tomatoes (part of the 400 g mentioned above)
- Sugar
- Salt
- Extra virgin olive oil
- Fresh thyme

Rabbit in beer:
- Begin by marinating the rabbit. Place the rabbit pieces in a large bowl and pour the beer over them so that they are completely covered. Leave to marinate in the refrigerator for at least 2 hours.
- After marinating, drain the rabbit from the beer (reserve the beer) and pat dry carefully. Lightly flour the pieces on all sides.
- In a large pan, heat a generous swirl of extra virgin olive oil and sauté the rabbit pieces until they are well browned on all sides.
- Remove the rabbit and in the same pan, add a little more oil if necessary, and sauté the finely chopped onion with the crushed garlic cloves and rosemary until the onion becomes translucent.
- Put the rabbit back in the pan along with the sautéed mixture, add the beer you set aside, salt and pepper. Cover and cook over low heat for about an hour and a half or until the rabbit is tender and the sauce has reduced and thickened.

Cherry tomato confit:
- Meanwhile, prepare the cherry tomato confit. Preheat the oven to 120 °C (250 °F).
- Cut the cherry tomatoes in half and place them on a baking tray lined with parchment paper, cut-side up.
- Sprinkle the tomatoes with a little sugar, salt, a drizzle of extra virgin olive oil, and a few leaves of fresh thyme.
- Bake and cook for about 1 hour or until they are wilted and caramelized, but not fallen apart.

Presentation: Serve the hot rabbit with the cherry tomato confit arranged around or on top of the rabbit as a sweet and aromatic side dish.
