Quinoa with Vegetables

Here’s a simple Italian-style recipe for quinoa with vegetables that you could try.

Ingredients

  • 200 g of quinoa
  • 400 ml of vegetable broth or water
  • 1 zucchini
  • 1 red bell pepper
  • 1 small onion
  • 2 cloves of garlic
  • 200 g of cherry tomatoes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil
  • Grated Parmesan cheese (optional)

Preparation

  1. Start by rinsing the quinoa under running water using a colander until the water runs clear.
  2. Bring the vegetable broth (or water) to a boil and cook the quinoa for about 15-20 minutes or until it has absorbed all the liquid and the grains have opened up. Then let it rest covered for 5 minutes.
  3. In the meantime, dice the zucchini, red pepper, and small onion, and mince the garlic cloves.
  4. Heat a bit of extra virgin olive oil in a pan and sauté the onion and garlic until they become translucent.
  5. Add the zucchini and bell pepper, and cook the vegetables until they are tender, adding the halved cherry tomatoes towards the end of the cooking.
  6. Season with salt and pepper to taste, and add the cooked quinoa to the vegetables, tossing everything together in the pan for a few minutes.
  7. Serve hot, garnished with torn fresh basil leaves and, if desired, a sprinkle of grated Parmesan.
