Quinoa with Vegetables
17/11/2023Here’s a simple Italian-style recipe for quinoa with vegetables that you could try.
Ingredients
- 200 g of quinoa
- 400 ml of vegetable broth or water
- 1 zucchini
- 1 red bell pepper
- 1 small onion
- 2 cloves of garlic
- 200 g of cherry tomatoes
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh basil
- Grated Parmesan cheese (optional)
Preparation
- Start by rinsing the quinoa under running water using a colander until the water runs clear.
- Bring the vegetable broth (or water) to a boil and cook the quinoa for about 15-20 minutes or until it has absorbed all the liquid and the grains have opened up. Then let it rest covered for 5 minutes.
- In the meantime, dice the zucchini, red pepper, and small onion, and mince the garlic cloves.
- Heat a bit of extra virgin olive oil in a pan and sauté the onion and garlic until they become translucent.
- Add the zucchini and bell pepper, and cook the vegetables until they are tender, adding the halved cherry tomatoes towards the end of the cooking.
- Season with salt and pepper to taste, and add the cooked quinoa to the vegetables, tossing everything together in the pan for a few minutes.
- Serve hot, garnished with torn fresh basil leaves and, if desired, a sprinkle of grated Parmesan.
This is a starting point, but you can personalize the recipe by adding other vegetables of your liking or spices such as turmeric or paprika to give a different flavor. Quinoa with vegetables is a versatile and nutritious dish, perfect as a main course or as a side. Enjoy your meal!
