Quinoa Salad with Edamame and Vegetables

Ingredients

  • 1 cup of quinoa
  • 2 cups of water
  • 1 cup of edamame (already shelled)
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced

  • 1/4 cup of chopped fresh parsley
  • Salt and black pepper to taste
  • Extra virgin olive oil
  • Juice of 1 lemon

Preparation

  1. Rinse the quinoa under cold running water for several minutes to remove the saponin’s bitterness that covers it.
  2. In a saucepan, bring the 2 cups of water to a boil and add the quinoa. Lower the heat, cover, and simmer until the quinoa has absorbed all the water, about 15 minutes.
  3. Once cooked, turn off the heat and let the quinoa rest with the lid on for another 5 minutes, then fluff it with a fork.
  4. While the quinoa cools, cook the edamame following the instructions on the package and then let them cool down.
  5. In a large bowl, combine the cooled quinoa, edamame, bell pepper, cucumber, red onion, carrot, and parsley.
  6. In a separate small bowl, prepare the vinaigrette by emulsifying the lemon juice with the vinegar, extra virgin olive oil, garlic, salt, and pepper to your taste.
  7. Pour the dressing over the quinoa salad and mix well to combine all the ingredients.
