Quinoa bowl with apples, cheese, and berries

The quinoa bowl with apples, cheese, and berries is a delicious and nutritious dish, perfect for a light but complete meal. Here is the recipe:

Ingredients

  • 100 g of quinoa
  • 1 apple
  • 50 g of sweet goat cheese or feta
  • 50 g of mixed berries (raspberries, blueberries, strawberries, etc.)
  • A tablespoon of chopped walnuts or hazelnuts
  • A few leaves of fresh mint (optional)
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper to taste

Preparation

  1. Rinse the quinoa under running water using a fine mesh strainer to remove the saponin soap that covers the seeds and could give a bitter taste.

  2. Cook the quinoa in a pot with twice its volume of water and a pinch of salt. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes or until the quinoa has absorbed all the water.

  3. Once cooked, turn off the heat and let the quinoa rest with the lid on for 5 minutes. Then fluff it with a fork.

  4. In the meantime, wash and dice the apple, and wash the berries making sure they are dry.

  5. Crumble the goat cheese or feta into pieces.

  6. In a bowl, combine the now lukewarm quinoa with the diced apple, berries, and cheese.

  7. Add the chopped walnuts or hazelnuts for a crunchy touch.

  8. Dress the quinoa bowl with a drizzle of extra virgin olive oil, a pinch of salt, pepper, and a splash of balsamic vinegar.

  9. Garnish with fresh mint leaves for a touch of freshness.

Serve your quinoa bowl as a main dish or as a rich and hearty salad.

Curiosity

Quinoa is considered a superfood thanks to its high content of proteins, fiber, and micronutrients. Moreover, it is an excellent alternative to cereals for those following a gluten-free diet. The contrast between the sweetness of the apples, the tangy taste of the berries, and the savory flavor of the cheese creates a particularly pleasant balance of flavors.
