Ingredients
- 100 g of quinoa
- 1 apple
- 50 g of sweet goat cheese or feta
- 50 g of mixed berries (raspberries, blueberries, strawberries, etc.)
- A tablespoon of chopped walnuts or hazelnuts
- A few leaves of fresh mint (optional)
- Extra virgin olive oil
- Balsamic vinegar
- Salt and pepper to taste
Preparation

Rinse the quinoa under running water using a fine mesh strainer to remove the saponin soap that covers the seeds and could give a bitter taste.

Cook the quinoa in a pot with twice its volume of water and a pinch of salt. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes or until the quinoa has absorbed all the water.
