Quiche with Vegetables and Bacon
17/11/2023Quiche with vegetables and bacon is a rich and tasty dish, perfect for a hearty lunch or a casual dinner. Here’s how to prepare an Italian-style quiche with a touch of our country:
Ingredients
- 1 roll of shortcrust pastry (or puff pastry if you prefer a crunchier base)
- 200 g of cubed bacon
- 1 zucchini
- 1 red pepper
- 1 medium onion
- 3 eggs
- 200 ml of cooking cream
- 100 g of grated cheese (Parmesan or Pecorino for a more intense flavor)
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Aromatic herbs to taste (basil, thyme, or rosemary)
Preparation
- Preheat the oven to 180 °C.
- Unroll the shortcrust pastry and lay it in a previously greased or parchment-lined quiche dish. Prick the bottom with a fork to prevent it from puffing up during baking.
- In a pan, sauté the chopped onion with a drizzle of oil until it becomes transparent. Add the bacon and let it brown until it becomes crispy.
- Cut the zucchini and red pepper into cubes and add them to the pan with the bacon. Cook the vegetables for about 5-7 minutes, until they become tender.
- In a bowl, beat the eggs with the cream. Add the grated cheese, salt, pepper, and chopped aromatic herbs.
- Pour the mixture of vegetables and bacon onto the shortcrust pastry base, making sure to level it out.
- Pour the egg and cream mixture over the vegetables, being careful to distribute it evenly.
- Bake the quiche for about 30-35 minutes, or until the mixture is golden brown and the surface is slightly puffed and firm to the touch.
- Let it cool off for a few minutes before serving.
The quiche is excellent both hot and at room temperature. It originates from French cuisine, but with the addition of Parmesan and aromatic herbs typical of our land, it is enriched by that all-Italian taste that makes the difference! You can vary it with your favorite vegetables or those available seasonally, and if you’re feeling creative, try adding some pesto for a truly Mediterranean aroma. Enjoy your meal!
