Purple Potato Gnocchi

Purple potato gnocchi are a tasty variant of the more classic potato gnocchi, and can be a very colorful and original way to bring a traditional Italian dish to the table. Here is a recipe you can follow to prepare them.

Ingredients

  • 600 g of purple potatoes
  • 200 g of 00 flour (this may vary depending on the type of potatoes)
  • Salt to taste
  • Nutmeg (optional)

Preparation

  1. Wash the purple potatoes thoroughly and cook them in plenty of salted water until they become soft. It would be better to cook them with their skins on to prevent them from absorbing too much water.
  2. Drain the potatoes and peel them while they are still hot.
  3. Mash the potatoes using a potato masher or a food mill to get a fine puree.
  4. Spread the purple potato puree on a kneading board and let it cool down a bit.
  5. Add a pinch of salt and grated nutmeg, if you like.
  6. Start adding the flour, a little at a time, and knead until you have a smooth and homogeneous dough that does not stick to your hands. Be careful not to overwork the dough to prevent the gnocchi from becoming hard.
  7. Take pieces of the dough and form long cylinders, then cut them into pieces of about 2 cm to make the gnocchi.
  8. Shape the gnocchi by using a fork or a special tool, rolling each piece of dough on its surface to get the classic ridges.
  9. Cook the gnocchi in a large pot of boiling salted water and remove them with a skimmer as soon as they float to the surface (a sign that they are cooked).
  10. Dress the purple potato gnocchi with the sauce of your choice and serve hot.
