Purple Cabbage Velvet Soup

Ingredients
- 1 medium-sized purple cabbage
- 1 large potato
- 1 white onion
- 1 clove of garlic
- 500 ml of vegetable or chicken broth
- Salt and pepper to taste
- Extra virgin olive oil
- Cream (optional, for those without dietary restrictions)
- Roasted pumpkin or sunflower seeds for garnish (optional)
Preparation
- Start by cleaning the purple cabbage, removing the outer leaves if they’re damaged, washing it, and cutting out the hard central part. Then thinly slice the cabbage.
- Peel and dice the potato into small cubes to cook evenly.
- Peel and finely slice the onion and garlic.
- In a large pot, heat a drizzle of oil and gently sauté the garlic and onion until they are soft but not golden.
- Add the purple cabbage and potatoes, then pour in the vegetable or chicken broth so that it covers the vegetables.
- Allow to cook over medium heat for about 30 minutes or until the vegetables are completely soft.
- Once the vegetables are cooked, remove the pot from the heat and blend the mixture with an immersion blender until you achieve a smooth and velvety consistency. If the velvet soup is too thick, you can add a bit of broth until you reach the desired consistency.
- Adjust the seasoning with salt and pepper and return the velvet soup to the stove to heat up before serving.
- If desired, you can add some cream to make the velvet soup even creamier.
