Pumpkin Soup with Shrimp

Ingredients

  • 800 g of cleaned pumpkin
  • 200 g of shelled shrimp
  • 1 white onion
  • 1 medium potato
  • 1 clove of garlic
  • As much vegetable broth as needed
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnishing)
  • Chili pepper (optional)

Preparation

  1. Start by cleaning and cutting the pumpkin into cubes. Peel and thinly slice the onion and garlic. Peel the potato and cut it into cubes.
  2. In a large pot, sauté the onion and garlic with a drizzle of extra virgin olive oil until they become translucent.
  3. Add the pumpkin and potato cubes to the pot and let them flavor for a couple of minutes.
  4. Cover the ingredients with vegetable broth and bring to a boil. Lower the flame and let it simmer until the pumpkin and potato are tender, about 20 minutes.
  5. In the meantime, in a skillet, cook the shrimp with a drizzle of extra virgin olive oil, salt, and chili pepper if you like a touch of spice. Cook the shrimp for 2-3 minutes on each side or until they turn pink and are no longer translucent.
  6. Once cooked, blend the pumpkin and potatoes with an immersion blender until you achieve a smooth and velvety consistency.

  8. Pour the soup into dishes, add the shrimp on top and garnish with the chopped fresh parsley.
