Pumpkin Tiramisu
17/11/2023Pumpkin Tiramisu is an autumnal variant of the classic Italian Tiramisu. Here is the recipe to prepare it:
Ingredients
- 250 g of mascarpone
- 3 eggs, with yolks and whites separated
- 80 g of sugar
- 300 g of pumpkin (already cleaned and cooked)
- Ladyfingers as needed (the necessary quantity)
- Unsweetened cocoa powder for decoration
- Salt, a pinch
- Cold espresso coffee (optional)
- Amaretto di Saronno or pumpkin liqueur (optional, for flavoring)
Preparation

Start by cooking the pumpkin. You can cut it into cubes and steam or bake it until it becomes soft. Once cooked, let it cool down, then blend it into a puree.

Separate the egg yolks from the whites. Beat the yolks with the sugar until they are frothy and light in color.

Incorporate the mascarpone into the whipped yolks and continue mixing until you obtain a homogeneous mixture.

Add the pumpkin puree to the mixture of mascarpone and yolks, blending well.

In another bowl, whip the egg whites with a pinch of salt until they form stiff peaks.

Gently fold the whipped egg whites into the pumpkin and mascarpone mixture, being careful not to deflate them.

If desired, you can flavor the Tiramisu: mix a little amaretto or pumpkin liqueur with the cold espresso coffee.

Begin assembling the Tiramisu: quickly dip the ladyfingers in the coffee (if using), arranging them in an even layer on the bottom of a dish.

Pour half of the pumpkin and mascarpone mixture over the layer of ladyfingers.

Add another layer of dipped ladyfingers, and finish with the remaining pumpkin and mascarpone mixture.

Let the Tiramisu rest in the refrigerator for at least 3-4 hours, better if overnight.

Before serving, sprinkle the surface with unsweetened cocoa powder.
