Ingredients

Preparation

- In another bowl, cream the butter with the sugar until it becomes creamy. You can use an electric mixer or a spatula.
- Add the egg, egg yolk, and vanilla extract to the wet ingredients and mix well until you have a homogeneous mixture.
- Gradually incorporate the flour mixture, kneading until a smooth dough ball forms.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 180 °C (356 °F) and prepare a baking sheet lined with parchment paper.
- Roll out the dough with a rolling pin on a lightly floured surface until it is about 5 mm thick.
- Use a pumpkin-shaped cutter to cut out the cookies and place them on the prepared sheet.
- Bake the cookies for about 10-12 minutes or until they are lightly golden around the edges.
- Let the cookies cool completely before proceeding with the icing.
For the icing:
- In a bowl, sift the powdered sugar and add the lemon juice little by little until you have a smooth but not too runny icing.
- Divide the icing into two parts and color one part with orange food coloring and the other with green.
- Use a piping bag with a very fine nozzle or a small spatula to decorate the cookies with orange icing for the pumpkin’s body and green for the stem.
- Allow the icing to set before serving the cookies.
