Pumpkin Roll with Ricotta and Chocolate Chips

Ingredients
- 300 g of pumpkin (already cleaned)
- 3 medium eggs
- 100 g of granulated sugar
- 100 g of flour 00
- 1 teaspoon of baking powder for sweets
- 1 pinch of salt
- 1/2 teaspoon of ground cinnamon
- 1 pinch of nutmeg
- 200 g of fresh ricotta
- 50 g of chocolate chips
- Powdered sugar for dusting
Preparation

Start by preheating the oven to 180 °C and line a rectangular baking tray with parchment paper.

For the pumpkin base, cook the pumpkin by steaming or in the oven until it becomes soft. Then blend it into a smooth puree.

In a bowl, beat the eggs with the sugar until you have a light and fluffy mixture. Add the cold pumpkin puree to the mixture.

Separately, sift together the flour, baking powder, cinnamon, nutmeg, and a pinch of salt. Gently fold these dry ingredients into the pumpkin and egg mixture.

Pour the batter into the prepared baking tray, leveling well with a spatula. Bake for about 10-15 minutes or until a toothpick inserted into the center comes out clean.

In the meantime, work the ricotta with a spatula or spoon until it becomes creamy. If you wish, you can also slightly sweeten the ricotta or add a bit of vanilla to sweeten it.

Once baked, turn the dessert onto a damp tea towel and gently peel off the parchment paper. Roll it up with the tea towel and let it cool completely.

Gently unroll the dessert, spread the ricotta on top, and sprinkle with chocolate chips. Roll it up again, this time without the tea towel, forming the roll.

Before serving, dust with powdered sugar and, for a final all-Italian touch, you might garnish with thin shavings of dark chocolate.
